For that age, it would be great! I have myself clients who both around 80 y.o. , both are very active and healthy, but i can not imagine how they are going to move. They have so much staff.....

Debbie Reynolds maybe you would want to make the offer verbally first over a dinner, coffee or glass of vino to judge their desire to have the help. Some people might take offense, and I know you would hate to ever do that. 

I would like it very much myself, though I would worry about not knowing where things were put. But then again, I lose things in my house all the time anyway.

I think I might offer that (so many hours of the organizers time) and if they think it is too invasive they will not take me up on it. On the other hand they may end up hiring the person on top of what I give them. She has been sick so it may come as a relief.

Many people would not appreciate someone hiring an organizer as a gift.  Given your buyers' ages, you may want to consider asking your buyers first and ask if they would like any help.  It may be a good idea not to call the organizer an organizer but simply as someone who can assist them with the moving in / moving out process - packing, unpacking, assisting them with deciding where to put the furniture and other contents.

Sounds like a nice idea but when it comes to "closing gifts" I don't spend more than the limit we are supposed to spend $25.00.  Just my opinion, when it comes to clients, high end or not, everyone gets treated equally.
