I like winning contests, I would go all out, plan to incorporate some moving parts in it. Maybe use a small water pump to create a water feature. Make sure to use  Gold Trim & coat every piece in chocolate. Maybe put some wheels on it & call it a Mobile Ginger Bread Home. And plant a Money Tree in the Front Lawn. Consider your gingerbread house depicted on a large platter that contains only gingerbread crumbs with a fabricated dog looking on with that 'I'didn't do it" look.

There will be LOTS of houses made and keep in mind, the dog will be equally complex to construct.

That's a fun concept!  I like Maria Sapio's idea of the brokerage.  Although, I also like the idea of secretly making one of the Broker's house (may take some digging to find their house though... which makes it more fun).  Other famous houses in history might be good too.  If there was some way to do a log cabin style home, that would be good. 

 

I did a google search on "Gingerbread Castle" and found some sweet designs.  Kohls has a great commercial right now that shows "competitive parents" making their own gingerbread houses and the husband makes a nice looking castle.

Here's an off the wall idea.  How about making a gingerbread "house" on your historic namesake, the armored cruiser USS Olympia?  She was the flagship of Admiral Dewey at the historic Battle of Manila Bay and she returned home the remains of the soldier from World War I that was buried in the Tomb of the Unknown Soldier.  She was home to thousands of US Navy sailors in her 20 plus years of service.   She is currently a museum in Philadelphia on the Delaware River beside the Hyatt Regency.

Ooh, My MIL always had these for the grandkids and I'm doing one for my past clients. Shredded wheat or hershey bars make good roofs. Necco wafers are good to decorate the house with too. We always loved when the kids got creative and made things like Santa on a jet ski or something crazy like that to go along with their house. You could also do a sports themed one. You could do a local business or something like the SPCA.

i'm not sure i'd be interested in building a cookie house just to win... I've done enough gingerbread houses with my kids.... 

so maybe my idea in this case: allow those agents who have kids bring them and build, in addition to that allow them judge what house is the best, record it or post live online:)  Everyone will have fun.

Modeling one after homes on the Historic Registry could be interesting. There are several with distinctive attributes which gingerbread construction could replicate. Use fondant for the connective structural aspects and frosting for aesthetic appeal. Know that it can be quite tedious!
