Adobo is a Spanish word for seasoning or marinade.  This is a famous and unique Filipino cuisine. Perfect for Christmas!!!   The Chicken Adobo ingredients: 2 lb chicken pieces, cut up or whole1 head of garlic, coarsely chopped (yes, an entire head!)4 Tbsp soy sauce (or more to taste)1 tsp ground black pepper2 cups water1/2 cup vinegar (rice vinegar or white wine vinegar work best)2 bay leaves2 Tbsp cooking oil Process: 1.  There are many things to do with those turkey leftovers! This recipe is light and healthy..it may make up for all that was eaten on Thanksgiving...For added crunch and protein, add coarsely chopped pecans and enjoy on lettuce for lunch or use it in a hearty sandwich. 1 cup sliced red seedless grapes, (optional ) (its different but good!) 1 cup diced celery 1/2 cup chopped green onion 3/4 cup coarsely broken or chopped pecans 3 to 4 cups cooked diced turkey 1 tablespoon chopped fresh parsley, optional 1 teaspoon lemon juice 3/4 to 1 cup mayonnaise 1/8 teaspoon ground black pepper salt, to taste Combine the grapes, celery, green onion, pecans, if using, turkey, and parsley, if using. This tasty recipe is for Crock Pot cooking. If you're tired after a long day at work, it's cold outside, and you would like a a meal to warm you up a bit .well.. crock pots are nice to have. Let the Crock Pot do the cooking for you! This recipe only requires 5 minutes prep. time! Easy! Ingredients  Original No-Stick Cooking Spray 1 pkg (11 oz each) creamy potato soup mix 1 can (14.5 oz each) Hunt's® Diced Tomatoes-No Salt Added, undrained 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained 4 cups water 1 pound small red potatoes, scrubbed, cut into bite-size pieces Directions Spray inside of slow cooker with the cooking spray.   This is a great summer/or weekend BBQ dish, but it might be better to call it Fall Breezy Ribs, since we are in the Month of October. It's starting to really cool off outside but these ribs are irresistable! So... let's grill while we can, before it gets too cold outside. (depending on the temp. and location you are at). 1/4 cup packed brown sugar 2 teaspoons seasoned salt 2 teaspoons chili powder 4 pounds pork loin back ribs or pork spareribs 1/4 cup yellow mustard 4 cups hickory chips 1/4 cup bottled barbecue sauce Bottled barbecue sauce In a small bowl combine brown sugar, seasoned salt, and chili powder. Tonto Natural Bridge is a natural arch in Arizona, USA, that is believed to be the largest natural travertine bridge in the world.This natural bridge was first documented by a Scotsman, in 1877 while hiding from hostile tribe members. This man and his family lived near the bridge until 1948. Their Lodge building survives to this day, and is included in the National Register of Historic Places. 1 small clove garlic 1/4 teaspoon kosher salt, divided 1 tablespoon strong freshly brewed coffee 1 tablespoon balsamic vinegar Freshly ground pepper to taste 1 tablespoon whole coffee beans (not flavored beans) 1 teaspoon whole black peppercorns 1/2 teaspoon extra-virgin olive oil 8 ounces sirloin steak, about 1-inch thick, trimmed of fat Preheat Grill to High. Smash and peel Garlic Clove (to a paste) with knife. In small bowl, mix with coffee and vinegar. Season with Pepper. Place Coffee Beans and Peppercorns on cutting board and crush with the bottom of a heavy pan. Mix the beans and peppercorns together. Rub Steaks with Oil.  Prep Time: 25 Min.   Cook Time: 40 Min. 8 Manicotti Pasta Tubes, 2 tspn. extra virgin olive oil, 1 cup chopped mushrooms, 1/4 cup chopped onion, 2 minced garlic cloves, 1/1/2 cups chopped fresh spinach. 1 egg white, 3/4 cup Parmesan cheese, 2 cups tomato/basil spaghetti sauce, chopped fresh parsely (optional). 1 cup Mozzarella. 1. Cook Manicotti according to package directions. Drain. 2. Preheat oven to 375. Heat oil in skillet over med.-high heat, saute mushrooms, onion and garlic. 2 min. Add Spinach and sautee until wilted. Remove from heat and cool slightly. Stir in 1 egg white, cheese, and salt and pepper to taste. Stuff spinach mixture into cooked pasta. 3. Spread 1 cup of sauce in Baking Dish. Thaw shrimp, if frozen. Peel and devein, if necessary. Rinse shrimp. Place shrimp in a large self-sealing plastic bag. Add oil, garlic, tarragon, thyme, and Old Bay seasoning. Seal bag and turn to coat shrimp evenly. Marinate in refrigerator for 1 hour. Prepare couscous according to package directions using the 1-1/4 cups broth in place of water. Stir tomatoes and onions into couscous. Set aside. In a bowl combine lemon juice and butter; set aside. In a large skillet cook and stir shrimp with marinade over medium heat for 3 to 5 minutes or until shrimp turn opaque. Pour half of the butter mixture over shrimp.  This dish pairs nicely with roasted meats and poultry. For example, it compliments my "Juicy Butterflied Roasted Chicken" recipe. 2 Florida Grapefruit, divided, 1/4 cup white vinegar, 3 tbsp. honey,1/4 salt, 1/4 pepper, 1 tsp. vegetable oil, 5 cups mixed salad greens, and 1/2 ripe avocado, peeled, pitted and cut into 1-inch cubes. 1. Peel 1 grapefruit and cut into sections; discard pith, Peel remaining grapefruit: reserve half. Cut remaining grapefruit half into sections; discard pith. Squeeze juice from reserved grapefruit half into small bowl. 2. Whisk together grapefruit juice, vinegar, honey, salt and pepper. Add oil whisking constantly until blended. 3.  Prep: 10 Min.    Cook Time: 45 Min. 1 Whole Chicken, Butterflied, 2 tbsp. Canola or Corn Oil, 2 tbsp. butter, 3/4 cup minced green onions, Grated peel and juice of 1 lemon and 1 orange. 1 tbsp. honey. 1. Preheat oven to 500F,. season the chicken on both sides with salt & pepper. Make an incision in both of chicken's thighs, tucking the legs in. 2. Heat Oil in large oven proof skillet. Place Chicken skin side down, browning 3 to 5 min., remove from heat, flipping chicken over to skin side up.  3. Place in oven. We get Fall, Winter, Spring, and summer. We even get a short Monsoon season towards the end of summer. There is so much to do here, to coincide with each season. In the Winter you can go skiing or sledding. In the Spring and Summer you can go hiking, biking, camping, boating...lots of activities to choose from. It is beautiful.
