Gananoque, Ontario One of the best things about living in Gananoque in the Autumn, is the local area apple orchards.  We're minutes away from fresh picked apples and freshly pressed Apple Cider.  I love sitting out on my porch (which just happens to be on the prettiest street in Gananoque) sipping on warm cider, inhaling all the wonderful autumn scents:  the cinnamon wafting up from my cider . . . it blends in perfectly with the wood smoke in the air from neighbours fireplaces . . . there's even a certain fragrance that comes from the gorgeous coloured leaves that line our street. But one of the most pleasant aromas would be of my Apple Cider Pie baking in the oven - like heaven must be! Gananoque, Ontario I am so angry, disappointed and disgusted all at the same time!!!   We planted 2 ornamental Pea Shrub Trees at the end of our walkway about 8 years ago.   They thrived in the perfect sun/shade combination and rewarded us with lovely yellow blossoms each spring. At some point on Sunday, someone attacked one of them with a knife (which is another worry) and hacked it down!   They then proceeded to cart it down the street and stick it in a neighbour's yard. Our neighbour kindly brought it back to us, thinking the wind had done the damage.  (Until she realized the wind blows in the opposite direction!!) Gananoque, Ontario Our Canadian Thanksgiving is this weekend and we're as busy as the squirrels getting prepared. The fall foliage is fantastic this year and once again, we decided to bring some of it into the house to decorate the dining room for Thanksgiving.  We did a huge arrangement on the corner fireplace. Gananoque, On I was showing a property the other day and noticed the most amazing acorns on this oak tree.  They were HUGE! The ground was littered with them and I was imagining the work-out the little squirrels and chipmunks would have trying to get these stored away for the winter!! I then wondered what the reason was for them being so large? And falling whilst still green?  What's that all about?? The Farmer's Almanac tells us, in our area, to get ready for a very harsh winter; the abundance of acorns and pinecones is nature's way of looking out for the animals. Today is another gorgeous day in the Town of Gananoque.  Sunny, blue sky and 24 degrees.  (75 degrees old school)  Still nice enough to BBQ without mitts on :0) We've got some nice steaks that I want to cook simply with a brush of olive oil, s & p and a rub of fresh garlic.  As with everything, we'll have a green salad along with it but I think we need another side dish, hmmmmm . . . mushrooms?    Nah, did that last week. Hungarian Pork & Sauerkraut Casserole in Gananoque on a beautiful Autumn evening - aaah! This is such a warm and comforting dish and I don't want you to pre-judge the flavour.   Let me just say,  I am not a big fan of Sauerkraut.  Another one of those creations where I have to wonder "what were they thinking"?  " a distinctive sour flavour, both of which result from the lactic acid that forms when the bacteria ferment the sugars in the cabbage" Ya, that'll be popular!!! Gananoque, On I wanted to use the venison chops I had in the freezer and so I pulled out a recipe I hadn`t used in years and I am soooo happy I saved it.  Unfortunately, we ate the meal before I remembered to take a photo - oops.   Trust me though, it was delish! I realized that the stuffing on its own would be fantastic as a side dish for Thanksgiving or perfect in pork and chicken too.  Preheat oven to 350 degrees.  Cut a pocket in the side of whatever you`ve chosen to stuff:  6 venison chops or chicken breasts, pork loin . . . In a bowl, mix together one and a half cups of garlic croutons with half an apple (peeled & chopped), half a cup of shredded Cheddar Cheese, I used Old2 Tablespoons of dried currants, 2 Tablespoons of melted butter, 2 Tablespoons of Orange Juice, dash of Cinnam...

Gananoque, ON The weather seems to be changing every day:  Autumn to Summer back to Autumn again.  I`m still in the mood for the grill and salads and this one is sensational with steak!    Cut one and one half pounds of potatoes (approx 8 potatoes) into pieces (I like bite size) and simmer for 8 - 10 minutes in salted water.  Drain and then toss with 2 Tablespoons of lemon juice.                 While potatoes are cooking, fry 3 bacon slices and set aside on paper towel to drain.             Whisk together in a medium bowl: 1/3 cup mayo1/4 cup of sour cream2 tbsp of lemon juicehot pepper sauce to taste Then gently stir in 1/2 cup of crumbled blue cheese and 2 finely chopped green onions. I was reading on Flipboard (one of my fave items on my ipad) an article titled "How to Get 7 More Hours in your Day" and my curiosity got the better of me . . . What would I do with a 31 hour day? To be honest, my first thought was MORE SLEEP! But wouldn't that defeat the purpose? The article started with tip #1 being "Handle things once (saves 15 to 20 minutes)" I do that already.  This is something I learned way back when the Paper Dragon regularly threw up in my office! Tip #2 was "Don't listen to the news first thing in the morning (30 minutes)" Stopped that years ago too . . .  something about depressing not getting my engine running  . . . Tip #3 ? A CHIP BUTTY in honour of the London Olympics is what my husband will be enjoying for his dinner tonite! (You couldn't pay me to eat this but he just loves them) ~ I believe this was first created in Liverpool. Just in case you are not familiar with this British 'delight' you take 2 pieces (rounds or slices, depending on where you are from) of plain white sandwich bread and butter them quite thickly - not a heartsmart menu item by any means! You then get chips (french fries) - they can be hot or cold - and pile them on to one piece of bread and on the other slice, you apply red sauce (ketchup or catsup!) or brown sauce (HP sauce) or Mayo (mayonnaise) Traditionally, it was always red sauce but it has since be adapted to suit the eater. I've even seen it with Garlic Butter over the chips!...

It seems almost everyday someone, somewhere is complaining about Walmart!   It varies but usually you can count on someone being upset with: their staffing policy their outsourcing of product the unsavoury shoppers their size (the store not the shopper!) But today I am so happy with my local Walmart because I have found the world's greatest fresh blueberries and I have to share a photo with you: They say they are a "PRODUCT OF CANADA" !!!   (even though they also say 1 US dry pint and they have a label from Naturipe Farms in Florida - what's that all about?) CHILLED  CUCUMBER, COCONUT MILK SOUP WITH AVOCADO - good enough for Vegans!! (You will need a blender or food processor) 1 large English cucumber - remove the seeds if you use a regular cucumber.  If you want to peel it, go ahead but I don't bother most of the time. More cucumber is good too!1 ripe Avocadohandful of Cilantro1 clove of garlic1 green onion1 lime1 can of Coconut Milkshredded or peeled coconut for garnish Coconut Water to drink and/or thin the soup!   In the blender, add the cucumber in chunks, the flesh of the Avocado, Cilantro chopped, garlic cut in pieces, green onion cut in pieces and blend til smooth. I have always been a fan of cold soups from the very first time I made Vichyssoise in 4H Club when I was 11 years old!  (that recipe and others, another day!) But Gazpacho does seem to be my favourite these days.  Our time on the Costa del Sol was spent enjoying Gazpacho every day for lunch.  As many different versions as there was restaurants to try!   The most memorable was our last beachside lunch on Christmas Eve, the waves practically splashing the windows and us wondering whether our flight was going to be able to manage in the storm that was predicted.  (it did and we made it home to Belfast in time for Christmas with the family!)   But boy oh boy was that soup fantastic!! TAPAS - CHORIZO SAUSAGE IN RED WINE - yum! Do you know what Tapas are? "Small irresistible mouthfuls of something savoury, seved with chilled white wine, beer or sherry" We live on Tapas in the summer months: an informal lunch or dinner will consist of about 5 or 6 dishes of what you might call appetizers.  Serves with an assortment of olives and nuts and usually a salad or two. This is one of my favourites: 7 ounces of Chorizo Sausage1 cup of red wine (spanish is preferred)2 tablespoons of brandychopped flat leaf parsley for garnish Crusty Bread I like to prepare this the day before I plan to enjoy it. PERFECT PATE FOR PENNIES! Let me begin by saying I really really dislike liver, immensely.  That goes for any of the organs that people insist upon eating such as kidney, heart, gizzards . . .   Blech !
