      Balsamic Glazed Tuna Cooking Spray ¼ Cup fat free low salt chicken broth 1 ¼ tsp. Coarsely ground black pepper ¼ tsp. Salt 4 (6 oz.) tuna steaks about ¾ inch thick ¼ tbsp. balsamic vinegar 4 tsp. Dark brown sugar 1 tbsp. low sodium soy sauce ½ tsp. cornstarch ¼ cup diagonally sliced green onion Place on grill sprayed with cooking spray or broil fish. Cook until done, but not dry! Remove and keep in warm place. Combine broth, vinegar, sugar, soy sauce, and cornstarch in a small saucepan. Bring to a boil; cook 1 minute stirring constantly. Spoon glaze over fish; top with green onions. Also good with mango chutney!   If Octoraro Orphie sees his shadow on Groundhog Day winter will hang around for six more weeks! If he doesn't spring is just around the corner. But this year there is an even bigger mystery surrounding Orphie. Experiencing the coldest winter in two decades Rick Rankin, the Hibernating Governor of the Slumbering Groundhog Lodge of Quarryville PA, worries that Orphie's followers may not be able to coax him out of his hole. Rankin stated that they have a number of contractors in their Lodge and they considered building a “protective dome” over the entire Southern End of Lancaster County but they probably couldn't get the permits processed in time.     Solanco FFA students Victoria Grimm, Missy Speicher, and Carly Bryant received the Keystone Degree, the highest degree awarded by the Pennsylvania FFA Association to its members. The degrees were awarded at the the recent Pennsylvania Farm Show in Harrisburg, PA.       The Keystone Degree is awarded based on student projects, leadership activities including office and committee assignments within FFA, FFA cooperative activities including chapter, county, regional, state, and national.         Penn State University’s Dance Marathon, commonly known as THON is the world's largest student run philanthropy. The 48 hour long event is held annually to raise funds for the Four Diamonds Fund, which benefits children with cancer under treatment at Penn State Hershey Medical Center.       High School and Middle School students in the Solanco School District at Quarryville Pennsylvania will be hosting a 12 hour MiniTHON and have been challenged to stay on their feet for 12 hours from 7 PM on Friday February 7th until 7 AM on Saturday February 8th in recognition of the struggles facing children with pediatric cancer.       Kick off assemblies have been held and recruitment has begun to register students for a small registration fee and to encourage them to get sponsors to raise a...

    Okay Folks this month’s recipe is one of my favorites: Potato Soup!       4 cups potatoes (sliced or diced), 1 stalk of celery (diced), 1 tbsp. onion (minced), 1-1/2 tsp. salt,   2 cups hot water, 2 tbsp. butter or margarine, 1 tbsp. flour, 1 can cream of celery soup,   2 cans milk (or more for thinner soup), 2 tbsp. fresh parsley (chopped), 1 hard boiled egg (chopped)       Brown onion in butter.   Add flour, blend well. Add potatoes, carrots, salt and water.   Cover and cook until vegetables are tender.   Blend cream of celery soup with the milk and heat. Add to cooked ingredients.   (You may wish to use 3 or 4 strokes with a potato masher before adding soup.   “Roadblocks”   In our efforts to find success we will all encounter “roadblocks,” things that block us or get in our way as we move forward. Know that you always have options if you stay positive…you can go over them, under them, around them or just get stubborn and go THROUGH them. To do this you must remain positive every day. Cautiously positive, in other words realistic. As an example: even if I want to be an NFL quarterback nothing I can do will get me there. So my goals must be realistic. November 8th and 9th is the 22nd annual Southern End Community Association auction and benefit dinner. The event will be held at the Hoffman building at 172 South Lime Street in Quarryville. Thursday evening there will be a spaghetti dinner from 5-7 pm served by the Solanco High School post prom committee. The auction will then start at 6 pm and consist of mostly gift certificates.  November 9th and 9am the auction will resume. Donations are currently being accepted for the auction up until the day of the auction.  SECA says this year they need the funds from the auction more than ever due to low revenue from the public pool over the summer. Due to a very rainy summer, pool revenue was lower than normal and currently needs some costly repairs. SECA serves 5 municipalities by providing t...

  Library Friends Slate Book Sale   It's book sale time at the Quarryville Pa Library at 357 Buck Road. Sponsored by the “Friends of the Quarryville Library” the volunteers have been working on Tuesday and Thursday mornings sorting books in preparation for the annual fall event. The donated books were stored in the basement of the library, but thanks to the Solanco High School football team, the ladies didn't have to strain their backs lugging them upstairs to the C.X. Carlson Cultural Center where they are arranged on tables.       The book sale will open from 6 to 8 pm on Wednesday October 23rd when for a small fee readers may be among the first to shop.
