Roasted Root Vegetables with Fennel & Garlic The key to making vegetables delicious is the freshness and roasting which gives them a chance to caramelize.  I’m a huge vegetable lover. A local new Pizza place: Diane went out to lunch with a friend, and it was a new pizza place. We have a favorite one, in Malibu that I have written about before. A Boston, MA transplant who opened a great pizza place.Now keep in mind Diane & I are very finicky when it comes to pizza places. They have to have thin crust pizza with good sauce and flavors.Well, it is almost as good as the one in Malibu, so when we have a craving, I do not need to go all the way there, we now have a local one for me to stop in...She ate a few slices and bought the rest home which we reluctantly shared. Of course, everyone has a bad day now and then.Today I am having a good day. That is/has been a rarity over the last year due to a couple of health issues. I'm not looking for an out pouring of sympathy, I just wanted to take a moment to explain my sporadic posting lately.If you are a person of faith you surly know the saying that when you are feeling down just count your blessings one by one. It works! It's also a great song.Despite the physical pain I have been going through the last year when I start counting my blessings I see many wonderful things going on in my life. I am very eager to tell you about them and I will over the next week with no complaining... even if I have to write from this bed. Wishing you all a wonderful Easter week.

Speechless Sunday:  we have had some strange weather here in Los Angeles lately. Out of nowhere, we had another rainstorm around 5pm today. Then when the clouds cleared look what we saw. What a beautiful rainbow. If you look closely at both pictures you will notice an  airplane coming to land at LAX, that is Los Angeles International Airport. When I was watching I saw the plane was in the middle of the Rainbow. By the time I got my camera out and took the two pictures well in  one photo, the plane was still in the rainbow, the other one just left it.This of course reminded me of Real Estate. Motivational Monday…Starting Early Larry and I took a late afternoon stroll at Kickerillo to check on the bluebird boxes. We were in an open wooded area.  Our eyes were partially focused ahead and on the ground so as not to trip over the Texas-sized tree roots. All of a sudden a small soccer ball whizzed across our path.  Chasing the ball was the cutest little tyke, maybe 4 years old.  His father closely followed him.   What impressed Larry and me was his father calling after him and saying… Heads up, son. Appreciating the Colors of Spring, Southern Style Out Connecticut weather is a typical Nee England Mode with a heavy rainfall yesterday which was snow in the northwest part of the state. Having spent time in the south earlier in the month we at least have the colorful flowers still in our minds. The entry way of or resort had a colorful array of rhododendrons, and if not for the leaves, I would not have recognized the plants as they were landscaped as small trees and not the typical bushes, we have in the north.   The flowers were so large and the petals so perfect in shape that they could have easily been mistaken as plastic. It will be a while before we see anything like this in CT, especially with temps still getting below freezing at night. I will have to be content with looking at...
